Pan de Nueces
By Santiago Garces
INGREDIENTS:
Mom always makes "pan de nueces" every year at Christmas. This sweet quickbread is best eaten in thin slices that can be toasted and buttered. It's delicious, wonderful and easy to make.

Dry Ingredients:
3 cups white flour sifted with 4 teaspoons of baking powder
1/2 teaspoon powdered cloves
1/4 teaspoon nutmeg
1 tablespoon cinnamon
1 cup sugar
1 to 1½ cups nuts and raisins

Wet Ingredients:
2 eggs
1 cup milk (low fat or almond is fine)
PREPARATION:
Preheat oven to 300 degrees. Mix dry ingredients. Mix wet ingredients. Mix wet and dry ingredients together. Mixture will be creamy and slightly sticky. Add all the nuts and raisins you want, 1 cup to 1 1/2 cups. Grease 2 large bread pans. Place mixture in pans to 3/4 full. Bake 45 minutes to an hour. Toothpick will come out clean when done. Best when thinly sliced. Once cool, wrap and refrigerate.
