Bacon & Blue Cheese Brussels Sprouts

  • 1 1/2 pounds Brussels sprouts, trimmed and halved
  • 1 tablespoon extra virgin olive oil
  • 1/4 pound blue cheese, crumbled
  • 3 strips bacon, cooked and crumbled
  • Garlic salt, to taste
  • Freshly ground pepper, to taste
  • Balsamic glaze, optional for topping
Preheat oven to 425 degrees. Line a baking sheet with tinfoil. Toss Brussels sprouts with olive oil, garlic salt and pepper. Roast for 15 minutes; stir, then roast another 10 to 15 minutes until desired brownness and crispness. Remove from oven and place into an oven safe serving dish. Sprinkle with blue cheese crumbles. Place under broiler for 2 to 3 minutes until blue cheese melts. Remove from oven, top with bacon, and serve. If desired, drizzle with balsamic glaze.
