Hollie's Homemade Pattie Sausage

INGREDIENTS:

2 1/2 pounds ground high-quality pork (have butcher grind pork shoulder if possible)
2 teaspoons salt
1/8 teaspoon ground pepper
3/4 teaspoon coarsely ground pepper
1/4 to 1/2 teaspoon cayenne pepper
1/2 teaspoon sage (more if you use fresh)
2 tablespoons brown sugar
3 tablespoons parsley
1/4 teaspoon crushed garlic (or to taste)

PREPARATION:
Mix ingredients thoroughly. Fry small pattie to check for taste. Adjust seasonings to preference. Mother's handwritten note above this recipe reminded me she loves me, wherever she is, to which she added, "Be happy today!" I pass along her message to you.
