Pan-Roasted Chicken Breasts

Ingredients I like to eat and to entertain. But I also like to enjoy spending time with family and friends, so I like simple-to-prepare dishes. Perfect for the holidays!

2 chicken breasts with skin
1 cup mushrooms (I suggest shiitake but could be any you like)
1 cup shallots
Rosemary
Salt and pepper
1 lime
Olive oil
Fry the breasts over olive oil for 3min on the skin side. Add mushroom and shallots in halves to the frying pan. Sprinkle the rosemary and season with salt and pepper. Bring the pan with all the ingredients into preheated oven to 350°. Roast for 12 minutes. Use the left over oil from the pan and add lime juice (1/2 lime per breast), a bit of water and olive oil. Reduce and use as sauce.
