Roast Duck Quarters

Ingredients
  • 4 (or more) duck quarters, fresh if possible
  • Juice of half lemon
  • Garlic powder
  • Salt
  • Pepper

If using frozen duck, defrost per instructions overnight in fridge. Wash duck and pat dry. Squeeze lemon juice over quarters. Sprinkle garlic powder, salt and pepper over all sides. This is according to taste, liberally for me. Place in shallow roasting pan. Line with aluminum foil for easier cleanup. Bake at 375 degrees for first 10 minutes, then reduce to 350 and bake for hour and a half, or until crispy brown. Adjust number of quarters to serve number of people on your guest list. Also consider big eaters and not so big.
